Dedicate the 4th (Fri) to wine at some of the top wineries in the area. There's lots more to do: learn about winemaking at V. Sattui Winery, explore and take pictures at Castello di Amorosa, soar above the sights with a balloon tour, and look for gifts at Oxbow Public Market.
