Do some cultural sightseeing at National Museum of the U.S. Air Force and Spring Grove Cemetery & Arboretum. Head to Jungle Jim's International Market and Jungle Jim's International Marketfor plenty of shopping. Venture out of the city with trips to Ark Encounter (in Williamstown) and Dayton (Carillon Historical Park & Dayton Mall). Get a sense of the local culture at Minneapolis Institute of Art and Cathedral of Saint Paul. Visiting National Eagle Center and Minnehaha Park will get you outdoors.
