Gail Ambrosius Chocolatier specializes in creating deliciously exotic dark chocolates in her Madison, Wis., shop daily for legions of loyal fans in the area and around the country. Much like coffee, fine chocolate takes on the characteristics of the regions where the cacao beans are grown. Gail uses single-origin chocolate for most of her truffles, meaning that the unique flavors of a particular region’s cacao are melded with the finest spices, fruits, teas, nuts and other natural ingredients for the ultimate chocolate experience.Plan my Madison trip by asking Inpirock to come up with tips and suggestions.
Gail and her staff are constantly tasting, adjusting and concocting new signature truffles and treats, bringing in fresh seasonal flavors for their handmade chocolates. At the same time, Gail is involved in every step of the process from ensuring the cacao farmers receive fair payment and practice sustainable agriculture to purchasing the equivalent of 100 percent of her energy use in wind and solar power.
At her shop, 2083 Atwood Avenue, the knowledgeable staff can help you select a personalized assortment or the perfect gift. Gail also offers monthly chocolate tastings— you can sample chocolate from the countries where Gail sources her cacao and learn about the particulars of cacao percentage and flavor. The best chocolate I have had. I love their different combinations of flavors. The cinnamon cayenne is sweet with a little kick. Well worth the money.
This place, and these people, take chocolate seriously. I've been acquainted with Gail for about five years now. She seems to always manage to have a team of great people working with her at the shop. Over the years, I've consistently found the truffles to be as good as any I've had, anywhere in the world, and I've done my share of traveling. Flavors and ingredients are clearly the result of both art and science. I've always felt welcome whether the people behind the counter recognize my face or not. The selection is broad, and free bites are usually available. This is as good as it gets. No wonder it has become a lasting institution in our city.
